Roasted Carrots with Fennel Honey

A Fennel Honey touch to the regular roasted carrots.

Sweet words are like honey, sweet to the soul and healthy for the body. We tried this absolutely scrumptious recipe in our kitchen today and thought of sharing it with you all.

It’s the official carrot season, and this is very different way of having carrots!

Roasting the carrots reduces the water content and intensifies the flavour as well as caramelizing the carrots which adds that gorgeous brown colour to it.

  1. 500gms carrot, peeled.
  2. 1 tbsp fennel seeds
  3. 1-2 tbsp olive oil
  4. 2-3 tbsp Fennel Honey
  5. Salt - according to taste

  1. Preheat the oven to 200 degrees C for 10 minutes
  2. First off, wash and peel the carrots and chop them into long thick wedges.
  3. Take a bowl, add in the olive oil, fennel honey, fennel seeds, salt and some pepper if you like. Now toss the carrot wedges in it and make sure to coat them well.
  4. Transfer the carrots to the baking tray and roast them in the preheated oven for about 30 minutes.
  5. Dribble some fennel honey using honey dipper and serve.

Enjoy it as it is or you can add some avocados and chickpeas to serve it as a warm salad. Make your own roasted fennel honey carrots with our Uni-floral Fennel Honey and let us know in the comments below how it turned out!

Things to know about using THOA Unifloral Honey?

  1. Honey should NOT be put in the boiling water/heated as it loses its medicinal benefits if its heated beyond 45 degrees Celsius. In this recipe honey is used as a sweetener and to give the depth of flavour to carrot and NOT for its medicinal value
  2. It is perfectly natural if the honey crystallises - it really depends on the glucose fructose level of the nectar its taken from - So don't worry!
  3. There is no need to refrigerate your honey even after it has been opened.
